Farideh Sadeghin, Culinary Director at MUNCHIES, has a recipe for chicken pot pie that will make you want to invite friends over immediately to serve them a little taste of home. She keeps it in her freezer-friendly recipe arsenal, making it the quintessential back pocket recipe.
Farideh says: Chicken pot pie is the ultimate comfort food, and the best part about it is that you usually have a lot of the ingredients to make it in your fridge and pantry (just throw in any vegetables you have lying around!). It’s the dish I make when I have friends coming over because you can make it ahead of time (heck, it even freezes well!) and just pop it in the oven so you don’t spend your evening in the kitchen, but instead, at the table drinking and chatting with friends. And you can top it with anything: biscuits, store-bought puff pastry, or even mashed potatoes (sometimes I top it with mashed potatoes and puff pastry, and serve biscuits alongside). Also, a salad, because you need some greens.

This was SO delicious!! I followed your exact recipe and I don’t think it was too thick at all. It was nice and creamy and the flavors were great! My husband ate two bowlfuls and wanted more. We had plenty for leftovers. Thanks–this is a keeper.

This looks amazing and fairly simple to do. I have never made stuffed anything but these look simple enough to try sometime. I love how you made garlic zucchini noodles to go with the dish. That’s my favorite way to eat zucchini noodles. I use my spiralizer weekly. Definitely one of the best birthday gifts I have received.

We tried this recipe and were disappointed with it. I’m sure we followed it step by step, and maybe it was supposed to happen this way – but the rice just turned to mush. the flavor was ok, but the mushy rice & the fact that there wasn’t much nutritional value to it aside from some protein from the chicken, we won’t be making it agin.

I think the size of chicken breasts has changed dramatically since Julia Child’s day, which could account for some of her shorter cook time.
