Blogs We Love: On Dishes for Baking, Serving, and Storing in the Fall

It’s FINALLY fall, which means colorful leaves, light sweater weather and pumpkin spice everything (but have no fear, this won’t be another blog post about pumpkin spice things). Instead, we’re talking about turning our ovens back on, dusting off our bakeware and getting in the kitchen. We’re inspired by these recipes to make a hearty meal that warms your insides as temperatures drop outside. The recipes are especially handy for baking ahead of time – going right from the freezer to the oven, and then to the table.



Creamy Spinach and Mushroom Pasta Bake
A pasta casserole is a great weeknight main dish because it can stay in the freezer and keeps well. Gimme Delicious Foods uses shells (but you could really use your favorite pasta shape), spinach and mushrooms, along with a butter and garlic cream sauce, to pack on the flavor in this dish.

Baked Fajita Tacos
Creole Contessa’s Baked Fajita Tacos have just the right heat, crunch and cheesy goodness you’re looking for on a cooler day. Slice some avocado on top for a little something extra.

Overnight Sausage, Egg and Croissant Breakfast Bake
We’re loving Life Made Simple’s shout-out to the most important meal of the day with this breakfast bake. It’ll bring everyone to the table on one of those slower fall mornings, and give breakfast the respect it deserves.

Chicken Chilaquiles Casserole
I Can Cook That takes chilaquiles, typically a breakfast dish, and transforms them into a great weeknight dinner dish with grilled corn tortillas baked with a homemade tomatillo salsa, shredded rotisserie chicken and Monterey Jack cheese. Good tip: this recipe is great for storing and eating the leftovers for another meal, which we can always get behind.



Easy Cheesy Hash Brown Potatoes
Melanie Makes uses diced hash brown potatoes mixed with cheese and topped with cheese (yes, please) to make an awesome, hearty side. And to top off all that cheese, there’s a layer of Corn Flakes that adds the perfect crunch to the dish.

Wild Rice Hotdish
Another great addition to the table from The Wicked Noodle, this “hotdish,” also known as a casserole, combines big chunks of mushrooms, rotisserie chicken, and toasted almonds in each bite.



Betty’s Banana Cake
Stuck with ripe bananas and not sure what to do? Bijouxs shares a great alternative to the typical banana bread solution. She works the bananas into a simple sheet cake and tops it off with buttercream frosting.

Chocolate Poke Cake
We’re saying YES to Cookie Dough and Oven Mitt’s dessert, which is perfect for all you chocolate lovers out there. It has chocolate cake, chocolate pudding, hot chocolate fudge, chocolate syrup, chocolate whipped cream and mini chocolate chips.
