1. Roll out store-bought pie crust and press into baking cups. Keep it simple by reaching for store-bought pie crust. Roll out the dough on a silicone pastry mat and cut it into small circles. Gently press the small circles of dough into silicone baking cups and place the cups into a muffin pan.

2. Prepare an easy pie filling. To make mini pumpkin pies, whisk together pumpkin purée, a generous splash of sweetened condensed milk, an egg, a pinch of salt, and a few pinches of pumpkin pie spice in a mixing bowl. You can also prepare an easy apple pie filling by tossing chopped apples with a bit of sugar and ground cinnamon.
