Thanksgiving Tip: How to Get the Crispiest Turkey Skin
While talking turkey with our friend Bryan Mayer at Fleishers Craft Butchery, we were surprised to learn that he prefers to glaze his turkeys with clarified butter or ghee instead of basting with the turkey’s juices, or even just butter. The reason why? “The key to crispy skin is to extract as much moisture and maximize the fat,” he says. By removing the excess water from butter (butter is made up of 16–17% water), you will eliminate the moisture and yield crispy, crunchy turkey skin.
