Rubs, marinades and sauces can deliver a lot of seasoning to the surface of your bird but only sink in a few measly millimeters. Brining does a better job, but requires planning ahead and takes up valuable real estate in your fridge. We’ve found that the best way to add flavor and moisture to your turkey is by injecting it, a method that uses a flavor injector to send marinades, brines, butter and spices deep into the meat.

It may sound a little extreme, but the magic of injecting a turkey is that it tenderizes and instantly infuses the meat with flavor. Plus, since turkey itself is inherently mild, it serves as a bit of a blank canvas, letting you play around with different marinade ingredients such as citrus, herbs, garlic, and a range of fats and liquids.

How to Inject a Turkey

As a general rule of thumb, prepare one ounce of brine or marinade per pound of meat (check out the recipe ideas below). If your brine or marinade has any solid components (i.e. spices or herbs), blend sauce in a blender before injecting to make it smooth. You can also finely grind herbs in a spice or coffee grinder. The main goal either way is to avoid clogging the injector needle.

Once mixed, pour marinade into a tall container like the Squeeze & Pour Measuring Cup or Prep Bowls to make it easier to draw the liquid into the Injector. Fill the flavor injector with your brine or marinade of choice and insert it into the breast, thighs, and other areas of the turkey. Inject in numerous spots all over the turkey, a few teaspoons at a time. Breast meat and drumsticks are traditionally dryer, so give a little extra attention (and marinade) to those areas.

When you’re done injecting, you can gently massage the turkey to help work the marinade through the meat. You may also want to mix up a little extra marinade for basting the turkey during roasting. (Just steer clear of any leftovers from the actual syringe, as those risk contamination from contact with the raw turkey.)

When to Inject a Turkey

After injecting, let the meat rest at least three hours and as long as overnight so the flavors can disperse through the turkey before cooking.

What to Inject a Turkey With

For a 15 lb turkey, combine 2 cups of liquid and/or fat + 1 Tbsp of kosher salt. Then add seasonings of your choice. You can also pair the injection with a brine or dry rub for multiple layers of flavor. (A word of caution: If you’re brining your turkey as well as injecting it, skip the salt in the injection mixture as you risk your bird turning out too salty.)

Here are several recipes to get your creative juices flowing.

1. Basic Brine

Liquid: Chicken stock

Additions: 1 tsp sugar

This simple approach works well with any method of cooking, keeping the turkey tasty and juicy.

2. Butter & Beer

Liquid: butter + beer

Additions: Worcestershire, garlic powder, onion powder, soy sauce

While combining ingredients, keep mixture warm (over low heat in a saucepan) so butter doesn’t harden.

3. Herby Turkey

Liquid: butter + chicken stock

Additions: rosemary, sage & thyme

This marinade pairs well with all the classic Thanksgiving sides. Warm as you blend for the same reason above. And shake syringe in between injections so bits of herbs don’t settle and clog the needle.

4. Italian

Liquid: chicken stock + olive oil + red wine vinegar

Additions: Italian seasoning + splash of balsamic

Yielding lots of moisture and a hint of tang, this marinade is a nice twist for Thanksgiving’s star staple.

5. Spicy & Smoky

Liquid: butter + white wine + chicken stock + orange juice

Additions: ground Aleppo pepper or paprika (smoked or regular)

This is a delicious direction for a deep fried turkey. The spicy seasonings will be infused throughout the meat instead of going on via a dry rub, for example, which could get knocked off when the bird is submerged in oil.

Any Southern-style sides (cornbread stuffing, macaroni and cheese) will pair deliciously with this injection. The next one, too!

6. Brown Sugar & Mustard

Liquid: water + brown sugar + mustard

Additions: cayenne pepper, garlic powder, thyme

Heat this marinade gently before injecting to melt the sugar and blend it more thoroughly with the mustard. This would be a tasty choice if you’re smoking your turkey, with the smokiness complimenting the marinade’s sweet and spicy notes.
